sweet potato and oat pancakes

Ingredients
- 50 grams sweet potato
- 100 grams Greek yogurt, plain, lowfat
- 2 eggs Egg
- 0.4 cups Milk
- 60 grams Whole grain oat flour
- 1 tsp Vanilla extract
- 0.5 tbsp Cinnamon
Instructions
- 1. In a bowl, mash the peeled sweet potato and combine all the ingredients. You can simply do this in a food processor.
- 2. Heat a skillet over high heat. Once hot, add butter to the bottom.
- 3. Turn the heat down to low and add your batter (you decide what size you want your pancakes to be)
- 4. Cover and let cook for 2-3 minutes; these don't bubble as much as conventional flour ones, so you have to keep checking them.
- 5. When you see the edges are cooked, flip with a spatula, cover again, and let it finish cooking for another 2 minutes. Repeat with the rest of the pancakes.
- 6. Serve with any toppings you like.
