pumpkin spice muffins w/ cream cheese frosting

Ingredients
- 1 1/2 cup 100% Pure Pumpkin
- 80 grams egg whites
- 60 grams Almond Milk
- 2 1/4 cup All Purpose Flour
- 96 grams Monk Fruit Sweetener
- 1 tsp Baking powder
- 1 1 serving Pumpkin spice
- 0.5 tsp Vanilla extract
- 1 tbsp Cream cheese, low fat
- 1 oz Greek yogurt, plain, nonfat
- 0.4 tsp Vanilla extract
- 0.5 1 serving Monk Fruit Sweetener
Instructions
- ingredients:
- muffin batter:
- • 1/2 cup pumpkin puree
- • 1/3 cup egg whites
- • 1/4 cup almond milk (unsweetened)
- • 12 cup all purpose flour
- • 1/3-1/2 cup 0 cal sweetener to taste
- • 1 tsp baking powder
- • 1 tsp pumpkin spice
- • pinch of salt
- • 1/2 tsp vanilla extract
- cream cheese frosting:
- • 1 tbsp lite cream cheese
- • 2 tbsp 0 fat Greek yogurt
- • splash vanilla extract
- • 1-2 tbsp 0 cal sweetener to taste
- instructions!!:
- • in a large bowl, combine wet, then dry ingredients until fully smooth. taste your batter to make sure it's sweet to your liking!
- • divide into 6 muffins & bake at 350 for 16-20 minutes, checking at 16 using a toothpick. the toothpick should have some moist crumbs, don't bake until it's fully dry
- • let cool & drizzle frosting on top!
