pumpkin and cinnamon cookies

Ingredients
- 70 grams Coconut flour
- 120 grams Pumpkin PUREE, Pumpkin
- 80 grams egg whites
- 6 grams Cinnamon Powder
- 40 grams Powdered erythritol
- 1 tsp Baking powder
- 1 grams Salt
- 30 grams Dark chocolate chips
Instructions
- 1. Mix the dry ingredients: In a bowl, combine the
- coconut flour, cinnamon, erythritol, baking powder, and a pinch of salt.
- 2. Add the liquid ingredients: Pour in the pumpkin puree and egg whites.
- 2°. For the puree I used the butternut pumpkin, I divided it into little pieces put It in the microwave for 6 minutes at 900w and then I blended it.
- 3. Let the dough rest (essential): Mix well. At first, it will seem too liquid, but let it rest for 5 minutes. The coconut flour will absorb the liquid and will form a dough.
- 4. Shape the cookies: Form thick balls, flatten them lightly on a baking sheet lined with parchment paper, and decorate with dark chocolate Chips (I used 90% chocolate because i like it Bitter like life however I do reccomend to use at least 85% but it isn't mandatory).
- 5. Baking: Bake at 175°C (conventional oven) for about 12-14 minutes. Check that the base is golden. They remain deliciously soft on the inside!
