Shared by @pocketkitty · Makes 2 servings · Main dishes
Ingredients
- 1 1 serving Cauliflower rice medley
- 150 grams Grilled Chicken Breast
- 1 1 serving Pineapple, raw
- 1 1 large egg white Egg white
- 1 1 serving Green onion, (scallion), bulb and greens, root removed, raw
- 1 1/2 cup Peas and carrots, frozen, unprepared
- 1 Tbsp Soy sauce
Instructions
- WARNING: contains a lot of sodium because of soy sauce! You can use low-sodium soy sauce instead and it’ll be less calories aswell! Please stay safe!
- For the cauli-flower rice to taste extra good you’ll have to cook it before hand!
- Didn’t add these to the recipe because they’re not needed!
- 1. Add 1 tsp of margarine to a pan, wait for it to foam a little and then add a couple cut onions till the onion sweats a little.
- 2. Add your cauli-rice. Blast it with heat until it browns a little, only turn it a couple times. Like a hash brown, so nothing sticks.
- 3. Let it cool on the side.
- ACTUAL RECIPE FOR FULL MEAL! It’s 2 servings!
- 1. Spray skillet, high heat. Scramble egg white for 20–30 sec, remove. (doesn’t matter if they’re not fully cooked, they’ll cook when everything’s added)
- 2. Spray again. Green onion, garlic powder and let it sit for 15–20 sec.
- 3. Pineapple, pepper (if wanted), peas and carrots 2–3 min, until pineapple browns.
- 4. Cauliflower rice + chicken 2–3 min. Don’t cover.
- 5. Egg white + soy sauce. Toss and serve.
- Adding more egg or more vegetables won’t change the calorie count as much! Although be careful with the soy sauce! If you want extra soy sauce, use low-sodium soy sauce, if not the calories will be quite different depending on how much you add!
- Let me know if you try it <3
