egg white oats!

Ingredients
- 40 grams australian creamy style oats with flax
- 70 grams Egg Whites
- 1 egg Quail egg, whole, fresh, raw
- 1 tsp Organic Coconut Sugar
- 25 grams WILD BLUEBERRIES
- 20 grams blueberries
- 0.1 tbsp Cinnamon
- 0.5 tbsp Almond butter
- 0.3 tbsp Chia Seed
Instructions
- 1) add 40g oats to a microwaveable bowl and cover with enough water for it to come out extra liquidy. mix in chia seeds
- 2) microwave for 1:20. while waiting, mix 70g egg white with a raw quail egg (note: the yolk from the quail egg adds creaminess and richness, but is optional. can replace with 10g more egg white)
- 3) using a whisk, quickly mix together the whites + quail egg with the oatmeal. ensure fully incorporated so that you wont end up with cooked chunks of egg white.
- 4) place in microwave for an additional 1:20. at 40 secs, take out and mix well with whisk and add more water if dry. microwave for the last 40 seconds (note: the oats will rise a bit in the microwave sometimes, so watch closely to avoid overflow)
- 5) the oats should be ideally a goopy but thick texture, not dry or eggy. if you find it too thick, add in more water. mix in cinnamon and sea salt to the oatmeal base.
- 6) in a small dish, add 30g wild blueberries and 25g regular blueberries. microwave for 20 seconds before removing and adding 1-2 tsp coconut sugar. microwave for another 10 secs and stir to make jam. (note: you can add chia seeds to this instead of the oat base and prepare before starting to make a thicker jam)
- 7) pour jam on oats and add toppings of choice! in this recipe i added almond butter, but any nut butter including tahini is ๐. you can also replace with a dark chocolate square which is extra yummy!! some other toppings i recommend: fresh berries, cacao nibs, bee pollen, hemp seeds, pumpkin seeds, coconut shreds
