Ingredients
- 800 grams Chicken, breast, boneless, skinless, raw
- 7 oz Onions, white, raw
- 6 mediums Tomatoes, green, raw
- 2 cloves Garlic, raw
- 30 grams Cilantro
- 1 1 serving Peppers, serrano, seeded, raw
- 450 grams Tortilla chips, yellow, plain, salted
- 6 servings Queso Fresco
Instructions
- 1. Cook the chicken breast in water with half of the onion and a little salt until fully cooked. Shred the chicken and set aside.
- 2. Boil the tomatillos, the serrano pepper, 1 garlic clove, and the remaining half of the onion until softened.
- 3. Blend the cooked tomatillos, serrano pepper, garlic, onion, and cilantro with a little of the cooking water until smooth. Season with salt to taste.
- 4. Pour the green salsa into a pan and simmer for a few minutes. Add the shredded chicken and mix well.
- 5. Add the tortilla chips to the pan and gently toss them with the salsa until they are coated. Cook briefly,depending on how soft or crispy you like your chilaquiles.
- 6. Serve immediately and top with Mexican crema and crumbled cheese.
